Beef Stew Served over Noodles


First of all let me apologize because this is not the best pic but it really is s good recipe! This to me is a perfect fall dinner and it cooks all day in the crock pot which I love!
4 lb boneless beef chuck, cut into pieces
salt
2 tbs veg oil
2 onions, finely chopped
3 cloves garlic, crushed
1 can diced tomatos, drained
3 red bell peppers, cut into strips
1 tsp oregano
2 tbsp soy sauce
2 tbsp instant tapioca (it thickens the sauce and no its not lumpy...thanks Michelle for that trick)
2 tbsp capers, rinsed
Brown beef with salt in 1 tbsp oil, put in crock pot. Place onions and rest if oil to skillet and cook until soft, stir in garlic and cook about a minute longer. Add to crock pot along with tomato's, peppers, oregano, soy sauce, and tapioca. Cook on low for 7 to 8 hours. Before serving stir in capers and salt and pepper to taste. I serve this over whole wheat egg noodles and its great! Enjoy
