Pulled Pork

This is one of the best pulled pork recipes I have ever tried...ask Alisha to post her bean recipe and it would be the perfect meal! Again it cooks all day in the crock pot so that's another reason I love it!

1 onion, chopped

1 3-lb boneless pork shoulder roast, I always try to remove any fat I see before cooking it

1/2 c chicken broth or water

2 c favorite BBQ sauce (mmmm we love the Sticky Fingers Brand)

2 tbsp mustard

2 tbsp honey

1 tbsp soy sauce

Scatter chopped onions on bottom of crock pot and place roast on top and pour in the broth. Cook on low for about 8 hrs or tender enough to shred with a fork. Take meat out and let cool then shred, remove any fat and gristle. Skim excess fat from liquid. Place back into crock pot and add BBQ sauce, honey, mustard, and soy sauce, season with salt and pepper and cook one more hour on low. Serve on hamburger buns...enjoy...this is sooo good!
