Salsa Chicken--in the Crock Pot

This is a great recipe. . . .I got it out of a crock pot recipe book and it usually use salsa, but the last time I made it I used a can of Rotel tomatoes (mild).

1 bag of chicken thighs (6-8 thighs)
1 can Rotel tomatoes (Mild)
1 can corn (drained)
1 can Black Beans (drained & rinsed)

Really simple? The only hard part is before you put it all in the crock pot you just brown the thighs in skillet before you put it in the crock pot (in the order it's listed). Servce with Sour cream and salsa. You can use Chicken Breast but it just seems to cook better with the thighs--chicken doesn't dry out as much.

If you make it with salsa--just add 1/2 - 1 cup of salsa of your choice in place of the Rotel tomatoes. I say 1/2 to 1 cup because if you use chicken breast you'll want more salsa so it won't dry out as much.

This meal makes great leftovers for eating taco style. Enjoy!
