Rice Pilaf


This is probably the most fattening stuff ever but it is so dang good. My kids ate the entire pan.

1 pkg dry chicken noodle soup or 2 cups of chicken broth (but I recommend the soup)
2 c cooked rice-not minute rice
2 c boiling water (up to 4 c if needed)
1/2 c butter
1 c mushrooms chopped (or a can)
Saute cooked rice and noodles from the soup in the butter. Add the mushrooms, seasoning from soup and water. Cover and simmer 15-20 minutes until thickened.

Its super easy. I usually take the lid off at the end to help it thicken up but it'll thicken on it's own too after the heat is off.
